We received a wonderful wedding present that is one of the most used items in our kitchen. It was a fabulous homemade cookbook packed full of family approved favorites. Guy and I have fallen in love with the Broccoli Chicken Divan recipe and like the others I have shared with you, it has become a family staple. Again the recipe is affordable and includes ingredients that are available in most kitchens.
Broccoli Chicken Divan with Rice
Ingredients:
- Cooked white or brown rice.
- 1 pkg of Chicken Breasts or Tenders, cooked and cubed
- 1-1/2 cups chopped broccoli (fresh or frozen depending on what you have at home)
- 1- 10.75 oz can Cream of Broccoli Soup
- 1/3 cup Milk
- 1/2 cup Shredded Cheddar Cheese
- 1 Tbsp butter, melted
- 2 Tbsp dried Bread Crumbs (whole wheat preferred)
Step by Step:
- Preheat oven to 450-degrees
- Follow packaging directions to cook 1-2 cups of white or brown rice.
- Cook and cube 1-pkg of chicken breasts.
- Cook the broccoli in a small saucepan with enough water to cover. Bring to boil for 5 minutes then drain.
- Place the cooked broccoli in a 8×8 baking pan or 9-inch pie pan. On top of the broccoli layer the cooked white or brown rice. Top the rice with cooked and cubed chicken.
- In a bowl mix Cream of Broccoli Soup and Milk and pour over the chicken. Sprinkle cheese over top.
- Mix melted butter with bread crumbs, then sprinkle on top.
- Bake for 15-20 minutes.
